Yummy Stir Fries

Stir fries are fun and easy to do… They are also great because you can easily make them gluten free for a friend who is gluten free or some member of your family.  You can make so many combinations and use up many different veggies and even some kinds of fruits.  You can make them vegetarian or add meat if you desire.

I have a good combination that I always like to use that I wanted to share with you all:

Chicken/Beef Stirfry

Sauce:

1.5 cups olive oil

1/2 cup water

1/2 cup mirin (sweet rice wine)

1/4 cup rice vinegar

1/2 cup soy sauce

4-5 minced fresh garlic cloves

2 tsp ground ginger

3 tbsp.  ses. seeds

Vegetables:

1 cup sliced celery, slice down the rib and slice in half

1 cup julienned carrots

1 cup sliced red or white onion

1/2 cup sliced green onions

1 cup green beans, washed and ends cut off

1/2 cup peas, drained

4-5 chicken breasts

Fruit:

1 can pineapple chunks

(Optional) 1 can mandarin oranges

Cook chicken breasts in 1 tbsp of olive oil for about 6-10 minutes until cooked through and browned on the outside.  Add green beans, onions, carrots, broccoli, and any other vegetables you wish.  Mix together.  Mix sauce and pour over the vegetables and chicken after the chicken is cooked.  Make some rice in the pressure cooker, in a pot, or in your rice cooker and enjoy this yummy stir fry piled atop a mountain of steaming rice.
